Making of Unicorn Drink

Magical Unicorn Lemonade
Ingredients Needed :
3 to 5 heaped spoonful of white sugar to combine with half a cup of water
Some ice cubes
Butterfly pea flowers (about 6-8)
Lemon juice (1 lemon) to combine with half a cup of water
 
1. Combine the water and sugar in a saucepan and bring to a boil. Reduce to a simmer and stir until the sugar dissolves, then set the syrup aside to cool.
 
2. Combine the lemon juice with half a cup of water and chill.
 
3. Brew the butterfly pea flower tea by steeping the flowers in half a cup of boiling water for 3-5 minutes until you see a deep blue hue. Sieve out the flowers and set the tea aside to cool.

4. Serve the butterfly pea flower tea with some ice, and the sweet syrup and lemon juice mixture on the side. As you slowly add the lemon juice mixture to the butterfly pea flower tea, you will see the blue tea changing colour into purple and then a vibrant magenta! Don’t blink, it happens really fast!

5. To drink, add the syrup, but go easy on the sugar! And there, you have the perfect magical unicorn lemonade!
The Science Behind It!
The butterfly pea flower contains a high concentration of a blue-violet plant pigment called anthocyanin; the colour of this pigment depends on the acidity of its environment. It starts out blue, and slowly changes to purple and then magenta as acidity increases!
